A natural alternative to trans fats, it has many other advantages: It’s cheap to produce, stable in processing, and slow to smoke—plus it has a long shelf life. Plantations certified by the Roundtable on Sustainable Palm Oil (RSPO) can’t clear “primary forests or areas which contain significant concentrations of biodiversity (e.g. endangered species) or fragile ecosystems.” They must minimize erosion and protect water sources. They must pay a minimum wage and get “free, prior, and informed consent” from local communities.
